I'd marinate lamb in a nice homey marinade. I'd combine oil, lemon juice, garlic, oregano, salt, and pepper in sealable plastic bag, and then introduce lamb. After sealing the bag and pressing out air, I'd start turning the bag and shaking it a bit to ensure lamb is coated. I'd then set the bag in a shallow disposable pan and allow it to chill in a refrigerator, turning bag over occasionally, over half a day to ensure its ready for the barbecue.
